Ingredients
  

  • 2 5-ounce cans solid white albacore tuna in olive oil, drained well
  • 1/2 cup high-quality mayonnaise
  • 1 large celery stalk, finely diced
  • 1/4 cup red onion, finely diced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, finely chopped
  • 1/4 teaspoon sea salt (or to taste)
  • 1/8 teaspoon freshly ground black pepper (or to taste)

Instructions
 

  • Place the drained tuna in a medium bowl and use a fork to gently flake it apart.
  • Add the finely diced celery, red onion, and chopped parsley to the bowl.
  • In a separate small bowl, whisk together the mayonnaise, lemon juice, salt, and pepper.
  • Pour the dressing over the tuna mixture and gently fold with a spatula until everything is just combined. Do not overmix.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Serve on toasted bread, in a salad, or with crackers.

Notes

  • For a milder onion flavor, soak the diced red onion in cold water for 10 minutes, then drain before using.
  • Taste and adjust seasoning after the chilling period, as flavors will deepen.
