Ingredients

  • 1 lb 80/20 Ground Beef Essential for juicy sausage
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper Freshly ground is best
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 tbsp Olive Oil Or Avocado Oil, for cookingExport to Sheets

Instructions

  • Combine Ingredients: In a medium bowl, add the ground beef. Sprinkle the kosher salt, black pepper, garlic powder, and onion powder evenly over the top.
  • Mix Gently: Using your hands or a fork, gently mix the spices into the meat until they are just combined. Be careful not to overwork the mixture, as this can make the sausage tough.
  • Form Patties: Divide the mixture into 8 equal portions and gently form them into thin patties, about 1/2-inch thick.
  • Heat Skillet: Heat the olive oil in a large skillet over medium-high heat until it shimmers.
  • Cook Sausage: Carefully place the patties in the hot skillet, ensuring not to overcrowd the pan. Cook for 4-5 minutes per side, until a deep brown crust forms and the patties are cooked through to an internal temperature of 160°F (71°C).
  • Serve: Remove from the skillet and serve immediately.

Notes

  • Don't Overmix: The most important tip for tender sausage is to mix the meat and spices until they are just barely combined.
  • Fat is Key: Using 80/20 ground beef is crucial. The 20% fat content renders during cooking, ensuring the sausage stays moist and flavorful. Using leaner beef will result in a drier, more crumbly texture.
