Equipment

  • 6-quart slow cooker
  • Large skillet (preferably cast-iron)
  • Tongs
  • Medium Mixing Bowl
  • Whisk

Ingredients

  • 6 pieces cube steak (approx. 1.5 lbs)
  • 2 10.5 oz cans cream of mushroom soup, condensed
  • 1 1 oz packet dry onion soup mix
  • ½ cup water or beef broth
  • 2 tbsp vegetable oil (optional, for searing)
  • Salt and black pepper to taste (optional, for searing)

Instructions

  • (Optional but Recommended) Sear the Steaks: Pat steaks dry with a paper towel and season both sides lightly with salt and pepper. Heat vegetable oil in a large skillet over medium-high heat. Sear steaks for 1-2 minutes per side until just browned. Transfer seared steaks to the bottom of a 6-quart slow cooker.
  • Mix the Gravy: In a medium bowl, whisk together the cream of mushroom soup, dry onion soup mix, and water or beef broth until smooth.
  • Combine and Cook: Pour the gravy mixture evenly over the steaks in the slow cooker.
  • Slow Cook to Perfection: Cover and cook on LOW for 6-8 hours or on HIGH for 4-5 hours, until the steak is fork-tender. Serve hot.

Notes

This recipe is very forgiving. For an oven-baked version, place seared steaks in a 9x13 inch baking dish, cover with the gravy mixture, seal tightly with foil, and bake at 325°F (160°C) for 2 to 2.5 hours, or until tender.
