Authentic Philly Cheesesteaks

Skip the trip to Philly! This recipe shows you how to make the ultimate cheesesteak at home with perfectly cooked, juicy ribeye and gooey melted cheese.

Equipment

  • 1 Large Skillet or Griddle
  • 2 Long Metal Spatulas

Ingredients
  

  • 1.5 lbs thin sliced ribeye steak
  • 1 large yellow onion, thinly sliced
  • 1 large green bell pepper, thinly sliced (optional)
  • 3 tbsp vegetable oil, divided
  • 8 slices Provolone cheese, (or White American, or Cheez Whiz)
  • 4 high-quality hoagie rolls, split open
  • Salt and freshly ground black pepper, to taste

Instructions
 

  • Sauté Veggies: Heat 1 tbsp of oil in a large skillet or griddle over medium heat. Add the sliced onions and bell peppers (if using). Cook, stirring occasionally, for 8-10 minutes until soft and lightly caramelized. Remove from the skillet and set aside.
  • Cook the Steak: Increase the heat to high. Add the remaining 2 tbsp of oil. Add the thinly sliced steak to the hot surface. Season generously with salt and pepper. Cook for 2-4 minutes, using your spatulas to chop and turn the steak until it is browned and cooked through.
  • Combine & Melt: Add the cooked vegetables back to the skillet with the steak and mix everything together. Use your spatula to divide the mixture into four equal portions. Place 2 slices of provolone cheese over each portion and allow it to melt completely, about 1-2 minutes.
  • Assemble the Sandwich: Place one open hoagie roll face-down over one of the cheesy steak portions. Slide your spatula under the entire pile of meat and cheese, and in one fluid motion, flip it over and into the roll. Repeat for the remaining sandwiches and serve immediately.

Notes

  • The Right Steak: Thinly sliced ribeye is the classic choice for its high fat content, which keeps the sandwich juicy and flavorful. Ask your butcher to slice it for you!
  • Cheese Choice: Provolone is the most popular choice, but for a true Philly experience, try White American cheese or even Cheez Whiz.
  • The Roll is Key: Use a high-quality, sturdy Italian hoagie roll that can hold up to the juicy filling without falling apart.
